Time for an Oil Change - Recipes

 

Simply Fabulous Salad Dressing

1 cup Extra Virgin Olive oil
Juice of 1 Lemon
1 Clove crushed garlic
3 Tbs. Pomegranate Juice concentrate
Sea Salt and Cayenne Pepper to taste

Place all ingredients in a jar with a lid and shake. This Healthy , delicious dressing is also wonderful on cooked veggies, rice, pasta, fish and more!


Savory Sautéed Spinach with DHA Eggs
(Serves two-four)

2-3 Tbs. Macadamia nut, rice bran or Coconut oil
2 Cloves Fresh Garlic, crushed
1 Pound Fresh Spinach
4 Gold Circle Farms Eggs
Sea Salt to taste

In a large skillet heat 2 Tbs. of the oil over medium-high heat. Add garlic and cook until light brown. Add spinach in batches as it shrinks, while stirring until spinach is wilted, yet still bright green (a few minutes). Transfer spinach to a serving dish. Cook eggs over easy or poached (yolks should remain runny to preserve their nutritional value). Top spinach with eggs and serve.


Great Balls of Flax

6 Large Dates
1 Cup ground Golden Flax seeds
3 Tablespoons unrefined Coconut oil
1/2 Cup Raw Walnuts or Almonds
1 Teaspoon Vanilla
1 Pinch of Sea Salt

Blend all ingredients in a food processor until the mixture can be formed into 1 inch balls by hand (add a few drops of water if it's too dry). Place balls (makes about 15) in zip-lock baggie and store in freezer or refrigerator. To turn Great balls of Flax into Apple Pie Balls, just add 1 small fresh apple (with peel), cored and diced and 1 teaspoon cinnamon to the mixture and blend a few seconds more. Makes about 20 Delicious balls. For yummy chocolate balls, add 2 Tablespoons unsweetened cocoa powder and 2 teaspoons honey or pure maple syrup.
