Savory Sautéed Spinach with DHA Eggs
(Serves two-four)
2-3 Tbs. Macadamia nut, rice bran or Coconut oil
2 Cloves Fresh Garlic, crushed
1 Pound Fresh Spinach
4 Gold Circle Farms Eggs
Sea Salt to taste
In a large skillet heat 2 Tbs. of the oil over medium-high heat. Add garlic and cook until light brown. Add spinach in batches as it shrinks, while stirring until spinach is wilted, yet still bright green (a few minutes). Transfer spinach to a serving dish. Cook eggs over easy or poached (yolks should remain runny to preserve their nutritional value). Top spinach with eggs and serve.
