Helayne Waldman

Helayne Waldman, M.S., Ed.D, , Founder of Turning-the-Tables™, has been
an educator, writer, film and TV producer for the past 25 years and
in that time has tackled subjects as diverse as nuclear power safety,
teacher education, software for the health care industry, and prenatal
nutrition and exercise.
Two years ago, she decided to take her passion for health and nutrition
and dedicate her career to this area. She remains focused on teaching
individuals and families the importance of good nutrition through individual
consultations, specialized programs, teaching, speaking and writing.
Helayne holds a doctorate in Education, a Masters Degree in Communication,
is a member of the National Association for Nutrition Professionals,
and a columnist for the Contra Costa Times Newspaper Group. Catch her
column on alternate Tuesdays in the Alameda Journal and on alternate
Fridays in the Montclarion.

Julie Spero, cooking instructor and personal chef. For those who have
completed the Turning-the-Tables™ program, Julie can take you the next
step. She specializes in whole food cooking instruction, and special-needs,
customized meal preparation.
Julie has 20 years of diverse culinary study in the U.S. as well as
France and Mexico. She is a Personal Chef specializing in delicious
nutritious whole foods designed to transform your health. She is Chef
Instructor for the "Eating for Health Gourmet Cooking Series,"
at Bauman College in Berkeley, CA. Julie is certified as both a Nutrition
Educator and a Natural Chef from Bauman College in Berkeley, CA.

Michele Simon

Michele Simon, Politics of Food Advisor is founder and director of the
Center for Informed Food Choices, a nonprofit organization that advocates
for eating a whole foods, plant-based diet and educates about the politics
of food. She has been working as a nutrition advocate since 1996, specializing
in policy analysis and legal strategies and has published numerous articles
about such issues as the National School Lunch Program, organic standards,
the USDAs dietary guidelines, veggie libel laws, genetically engineered
foods, and banning obesity lawsuits. She lectures extensively, has appeared
on several national radio programs, and teaches Health Policy at UC, Hastings
College of the Law, where she also received her law degree. Michele obtained
her masters degree in public health from Yale University.
